ETTO is us!
A South Tyrolean and a Piedmontese, in love with the Marche region.
We’ve worked in various regions and settings, including big cities, but in the end the charm of the Marche hills won us over, and we had to come back.
ETTO is a project that deeply engages and unites us.
ETTO is where we want to bring out the many points of contact, the affinities and the synergies of different worlds.
Bringing Piedmontese cooking and traditions together with those of the Marche to create a new story: a “cuisine of the land” where making the most of the raw ingredients is the base on which we build our tasting menus and your experiences.
In the hills
ETTO overlooks the vineyards, in the heart of the Marche hills
ETTO is at Tenuta di Fra', so the wine experience will be complete and enveloping too.
The name
The hectogram: a
simple measure
In Italian, etto is short for hectogram: one hundred grams, a simple yet essential measure in the kitchen. But the suffix -etto also gives words an affectionate nuance, expressing tenderness for something dear and precious.
